We taste a smokiness in Vermont’s own dark maple syrup that we thought would pair well with the smokiness of agave spirits, like tequila. Rather than adding maple syrup to a base spirit, making it sweet, we fermented agave syrup and maple syrup together to create an utterly unique Vtquila.
Production: We import organic blue agave nectar from Jalisco, Mexico, and mix it 4:1 with dark maple syrup. Three to four weeks of fermentation and double distillation through our hybrid still result in a spirit like no other in the world.
Nose: Gentle maple, fruity esters, and echoes of tequila.
Palate: Very clean and pure, with a gentle tequila flavor overlaid with the smoky sweet notes of maple syrup. Flavors are delicate, not dominant, but stand up to citrus and other appropriate mixers. Finish is very clean, with a nice residual warmth from the high proof, and lingering maple notes.
1 oz Papilio Agave Spirit
1 oz Cynar
1 oz Punt E Mes
2 drops Urban Moonshine Citrus Bitters
Combine all ingredients in a mixing glass with ice. Stir until cold and strain straight up or on the rocks. Garnish with a flamed orange peel.
Bracing For Mud Season
2.5 oz Papilio Agave Spirit
.5 oz Amaro Averna
.5 tsp Brown Sugar Simple Syrup
Combine all ingredients, with ice, in a mixing glass. Stir until ice cold and strain, straight up, into a chilled glass. Garnish with a thin slice of lemon peel.
2 oz Papilio Agave Spirit
.5 oz Campari
.5 oz fresh grapefruit juice
.5 oz fresh lime juice
.5 oz maple syrup
Combine all ingredients in a shaker with ice. Shake and strain straight up or on the rocks. Garnish with a twist of lime.
