Peregrine Gin

Origin

Our version of a dry gin. If Mythic can be described as an herb garden, Peregrine is a spice garden. Emphatic juniper, spice from notes of cumin, cassia, and cardamom, and a long, luscious finish redolent of orange make for an utterly unique taste experience.

Notes

Production: Our base spirit is the same as is used for all of our grain-based spirits, distilled to a much higher proof to create a neutral base. Valencia orange peel,  angelica, cassia, coriander and a number of other botanicals are macerated with the traditional juniper berries, then redistilled with our small copper pot still to create an intensely flavored gin with a beautiful nose and round mouthfeel.

Nose: A spice garden with notes of citrus, cumin, and ginger.

Palate: Smooth but assertive, with a long, lingering orange finish.

VT Gimlet

1.5 oz Peregrine Gin
.5 oz fresh lime juice
.5 oz fresh orange juice
.25-.5 oz Vermont maple syrup (depending on how sweet you like your cocktails)

Add all ingredients to a shaker with ice. Shake and strain up or on the rocks.

The Corpse Reviver #2

1 oz Peregrine Gin
1 oz Cointreau
1 oz Lillet
1 oz fresh lemon juice
1 or 2 drops of absinthe or Pernod

A cocktail that uses equal parts of everything, which makes it an easy recipe to remember. Place all ingredients in a shaker filled with ice; shake vigorously for 1 minute; strain and serve up in a cocktail glass.
