We tend to try things that are decidedly non-traditional. There is a tradition of aging tequila in used bourbon and rum barrels; we believe we are the first to use new American Oak barrels.
Production: We put our Papilio Agave-Maple Spirit into oak barrels at 125 proof, then aged it for at least six months.
Nose: Wood, vanilla, caramel.
Palate: Opens with dominant flavors of spice, pepper, and vanilla on the palate. The finish is warm and woody, with nutty maple notes followed by a clean burn.
